Savoring the earthy flavors of Italy's heartland. Umbria is for food lovers...hand-rolled stringozzi, bruschetta drizzled with extra virgin olive oil, grilled mushrooms, and of course, wonderful local wines. Join James Boyce of Studio at the Montage Resort & Spa in Laguna Beach on the Sep 30-Oct 7 departure as he shares with us the best foods of the region. Our menu highlights figs and gorgonzola, grilled Norcia sausage with lentils, and truffles fresh from the harvest.

Highlights of our week include:
Shop in the open air market for wild arucola and porcini. Then into the kitchen to grill bruschetta over an open fire and roll out fresh umbricelli. Feast on our creations with a family-style dinner in our inn's frescoed dining hall.

Professor Ciri, a local producer of organic olive oil, welcomes us to his farm house in the heart of the Tiber Valley. We take part in an informative and fun tasting of extra virgin oils, and sample his sweet cookies made with olive oil.

Ride to Montefalco and taste some hard-to-find Sagrantino and Rosso di Montefalco, made by a handful of small wineries in the vineyards surrounding the town.

Visit a salumeriato taste the local specialties such as hearty prosciutto di Norcia, sheep's milk ricotta with truffles and wild boar sausage.

Fabio and his mother invite us to their agriturismo we learn how to make torta al testo with spinach & pine nuts and lentils with sage & pancetta.

Along the way our food is complemented by exquisite hotels, knowledgeable guides and a classic landscape of olives, vineyards and medieval towns. We visit the villages of Spello, Assisi, Bevagna and Spoleto and the wine towns of Montefalco and Torgiano.
